How to Make Garlic Pea Sprouts

Garlic pea sprouts are made by steaming young pea plants that haven’t formed peas yet. There are many other vegetables that are served in a “young shoot” style like gai lan choy or bok choy.

Fresh pea sprouts have an amazing flavor. You’ll find them for sale in big bags at Chinatown grocery stores. Past a quick rinse in the sink, there’s no other prep you need to complete to get them ready to cook.

These garlic pea sprouts are a terrific dinner side dish, in addition to being a welcome addition to a dim sum meal. The cooking preparation below will also work really well with bok choy, choy sum or chinese broccoli.

Garlic Pea Sprouts Recipe

Makes: 1 Plate | Prep Time: 5 Minutes | Cook Time: 10 Minutes
Adapted From: Little Corner of Mine

Ingredients

10 ounces pea sprouts, rinsed and drained
1 small piece of ginger, skinned and thinly sliced
3 cloves of garlic, thinly sliced
1 tablespoon of cooking oil
1 tablespoon Shaoxing rice wine
1 teaspoon chicken stock powder
Salt to taste

Directions

1. Add the cooking oil to a heated wok. When hot, add the ginger slices and stir fry until fragrant. Add the sliced garlic, and stir fry until slightly brown.

2. Add the pea sprouts and stir fry well, adding the salt to taste. Stir fry until the pea sprouts wilt and the leaves are tender and soft (about 2-3 minutes).

3. Finish by adding the Chinese rice wine and chicken stock powder until the ingredients glisten. Mix well and serve hot!
